鳥結葩菲
-- 材料
蛋黃 - 6隻
砂糖 - 40g
水 - 50ml
液體葡萄糖 - 15g
淡忌廉 - 250ml
鳥結糖 - 適量
-- 做法
1. 蛋黃打至發泡
2. 砂糖加入水及液體葡萄糖, 煮至116°C, 離火
3. 加入已打發之蛋黃再打至稠身. 再次加熱至70°C, 熄火放涼
4. 切碎鳥結糖, 備用
5. 將忌廉打發至7 - 8 成, 加入蛋黃醬拌勻
6. 再加入切碎之鳥結糖, 拌勻後倒入模內, 冷藏至凝固即成
