蒜香炒飯
-- 材料
飯
蒜片 (蒜片是點綴, 可加可不加)
蒜蓉
蔥或其他喜歡的香草類
白酒 - 少許
生抽 - 少許
-- 做法
1. 蒜片炸到顏色金黃即可夾起, 用廚房紙巾吸掉油份備用
2. 蒜蓉下油鑊慢炒, 至變色但不燒焦
3. 轉金黃色後加一小塊牛油
4. 牛油溶化後加入一大匙白酒
5. 酒精揮發後再加入1, 2 大匙生抽
6. 再把加熱過的飯加入, 迅速用鑊鏟把飯拌開
7. 最後加上蔥花, 香草類拌炒一下, 或加上粗粒胡椒起鍋, 再放上點綴用的蒜片即成
